Cooking at College 101

Impress your date with this simple, scrumptious meal for two!

CHEESY BREADCRUMB CHICKEN

1. Arrange 2 chicken breasts in a bak-ing dish and season with salt and pepper.
2. Mix 1/2 cup of grated mozzarella, 1 tablespoon of pesto, 1 tablespoon of cream cheese and 1/2 teaspoon of mixed herbs.
3. Spread the mixture evenly over the chicken breasts and sprinkle gener-ously with panko breadcrumbs.
4. Bake at 400 degrees for about 30 minutes or until the chicken is cooked through.
5. Serve with your favorite steamed vegetables and rice.

RASPBERRY AND LIME YOGURT BOWLS

1. Place 1 cup of raspberries in a dish, sprinkle with 1 tablespoon of pow-dered sugar and stir gently. Separate into 2 bowls.
2. Mix 1/2 cup of mascarpone cheese with 1/2 cup of plain full-fat Greek yogurt, 1 tablespoon of powdered sugar and the juice of 1/2 lime.
3. Spoon the mixture over the raspber-ries.
4. Put a few raspberries on top to dec-orate.
